Here is the awesome recipe for Chicken enchiladas:
1 can (10 3/4 oz) cream of mushroom soup.
four cooked chicken breasts.
4 oz chopped chili peppers
2 cups shredded cheddar cheese
7 flour tortillas.
save out a little cream of mushroom soup in a bowl. we'll get to that in a minute. mix all ingredients (except the tortillas :]) in a bowl. add milk to make it kinda runny, not too thin.
add a little milk to the cream of mushroom soup that you saved out. mix.
butter a 9x13 pan. put cream of mushroom soup and milk mix in the bottom. divide the enchilada sauce onto the 7 tortillas.
fold the tortillas and put in the oven @350 for about 30 minutes.
